Weekend Finds 7:20:14

It has been HOT in Portland, you guys. I’m talking like 90 degrees, humid, blech. The kind of hot that just makes you want to dip your toes in a fountain, drink milkshakes, and take a nap in the afternoon with the fan blowing full force. When it’s this hot, it officially becomes salad season. Here are some weekend finds to help deal with the heat.

1. Gazpacho

Jonah claims he doesn’t like gazpacho, but I’m convinced I can change his mind if I find the perfect recipe. I haven’t committed to one yet, but I’m determined to make some this week, before it cools off too much. I’ve been looking at recipes like this, this, and this. Let me know in the comments if you have a great gazpacho recipe.

2. Tomato, Corn, Cucumber Salad

Doesn’t that look just like the definition of summer?

Earlier this week, we needed a quick, crunchy, cold dinner before we went to play a show. I picked up some corn, grape tomatoes, and feta on the way home, we sliced it all up, added some cucumber, and voila, dinner (via this recipe). Then last night we went over to a friend’s house for salad night and we pulled out the leftovers, threw them on top of some spinach, added some chickpeas and a tahini dressing (this one minus the ginger and garlic, plus a little more vinegar). It was filling and refreshing and really delicious.

On the nights it isn’t so hot, we cook things like this crispy tofu with sriracha lime honey sauce from I Am a Food Blog. I think this might be my new favorite way to make tofu. Be warned though, that sauce is spicy. (I like eating spicy things when it’s hot out – why not be hot on the inside and the outside?) Also, if you don’t know about I Am a Food Blog, you should. Go to her site and poke around. Everything we’ve made from her has been awesome.

4. Cleaning out your spice drawer

We are re-signing our lease, and that means we are doing a massive cleaning of our house. We’ve probably cleaned out our spice drawer(s) multiple times since living here, but it can’t hurt to do it again. It’s important to know how long you can keep things before they lose their punch. This guide from The Kitchn is a great help.

5. Miso Quinoa Pilaf with Eggplant and Cucumber!

I don’t usually like quinoa. I find that it tends to be underseasoned/underdressed, and as a result is awfully bland. But my roommate is slowly changing my mind… We made dinner together a few weeks ago from some leftover, and we made this really delicious quinoa bowl with roasted vegetables. Anyway, point is, I’d like to try to eat more quinoa, and this miso quinoa pilaf looks like a great place to start.

Weekend Finds 3:9:14

It has been an exhausting week. I’d like to nap until next week to recover please and thank you. I woke up this morning thinking maybe I’d finally caught up on my sleep since I’d slept until 10 (10! It’s like I’m in college again!), but alas, it was simply daylight savings playing a trick on me. My suggestion? Read these weekend finds with a mug of hot cocoa to keep you company, and then take a nap yourself.

This recipe for miso coconut chicken includes two of my favorite ingredients: miso and coconut milk. So I think I’ll have to make it. Soon.

4. Yelp…?

To Yelp or not to Yelp? // Serious Crust by Annie Fassler
The question remains, how good of a resource is Yelp?

I’ve been hearing some interesting thoughts on Yelp lately. Andrew Zimmern doesn’t like the platform, we all know that. And now we know a lot of chefs don’t read reviews themselves, but rather assign the task to their managers. Do you use Yelp? I do, but everything is definitely taken with a grain of salt. I have trouble trusting people whose taste and experience levels I don’t know. I would so much rather have the review or advice of a friend, or someone I admire, or who I know is an expert. Every place is bound to have at least one bad review, so do you let that deter you from going? All of this crowd-sourcing of reviews puts the consumer in a position of power, and I think it’s very interesting. What are your thoughts?

5. Blu Skillet Ironware

Hello? Yes. I would like ALL of the things from this shop in Seattle. I’m definitely making a point to visit the Blu Skillet Ironware workshop next time I’m in town. Specifically, I love the fry pans, and also think the salt bowl set is very sweet. But let’s be real, I would take any of it.

Weekend Finds 2:16:14

It’s time for weekend finds! It has been a quite a week – the snow melted, I made a trip to the coast with friends where I baked some delicious food (more testing and then a recipe to come). And then… it was Valentine’s Day. We visited Expatriate after I got off of work, which I had been wanting to try for a long time! And now I’m baking for Carmelle’s birthday – details in find #1!

I’m making ice cream cake for my roommate’s birthday tonight! Her birthday was on Friday, but today was the first day I’ve had to bake her something. We’re going to the Amos Lee concert tonight with her (her boyfriend got her tickets for Christmas, and I got Jonah tickets for his birthday), so we’ll eat it after listening to an evening of sweet crooning. It’s kind of a mixture of a bunch of recipes, including chocolate wafers from Smitten Kitchen and fudge sauce and assembly tips from Not Without Salt.

2. Interview with Rachel Cole

I’ve never heard of Rachel Cole before, but after reading this interview with her on The Kitchn, I am loving what she has to say about food and eating. I particularly like what she says about having your compass needle point towards pleasure, fear of food, and the importance of fresh food.

I love hot cocoa, and I love the convenience of hot cocoa packets, but I don’t love that I don’t always know what the ingredients listed on the packets are. I am really into making this homemade cocoa mix, especially to go with the vanilla marshmallows I got for Christmas!

More, I say, more! Remember when I told you about those miso and harissa roasted vegetables? And how amazing they are? This seems like another great recipe to try, and I love the addition of the maple syrup and rice vinegar.

Ok, so making your own puff pastry takes a lot of time, many hours of rolling and chilling and rolling and chilling, but wouldn’t it be cool to make it yourself instead of buying it at the store in the freezer aisle?! I don’t know when exactly I’m going to try this puff pastry recipe, but I’m going to try it, darn it!

Miso Creamed Kale

I’ve posted about this miso creamed kale before, in a Weekend Finds post back in October. This recipe was recommended to me by a foodie friend, whose tastebuds I respect. So I was excited when I finally got around to making it. Easy, super flavorful, and wintry (most creamed veggie dishes are, in my opinion).

Miso Creamed Kale

Ingredients

3 Tbl unsalted butter (divided)
1 large shallot
2 cloves garlic
Salt and pepper
1 bunch lacinato kale, stems removed, roughly chopped
1/2 cup shimeji mushrooms with stems or shiitake mushroom tops, sliced into strips
1 Tbl soy sauce
1/4 cup dry vermouth
1/2 cup heavy cream or half & half
1/4 cup white miso paste

Instructions

In a large pan or skillet, melt 2 Tbl of butter over medium heat. Thinly slice the shallot and garlic, and add them to the pan, along with a sprinkle of salt and pepper. Turn heat to low, and let the garlic and shallot cook for a few minutes until they’ve got a bit of color. Add the kale, and cook until it’s wilted.

While you’re cooking the kale, in another pan, melt the remaining 1 Tbl of butter over medium high heat. Toss in the mushrooms (whichever kind you’re using), and cook until… well until they’re cooked through and soft. Add the soy sauce to the mushrooms, cook for another minute, and remove from heat.

Increase the heat under the kale to medium high, and add the vermouth. Cook until it is just evaporated, then add the cream/half & half and the miso. You’ll have to do a fair amount of stirring to break up the miso and make sure everything is evenly distributed and combined. Turn your heat down to medium and cook for a couple more minutes, until the sauce is slightly reduced and thickens up a little bit. Top with mushrooms, and serve.
