Weekend Finds 4:27:14

It has been a delicious week. I cooked some awesome food, some of which I’ve shared, and some of which will be coming up shortly. Spring is upon us, and I’m starting to see it creep into the grocery stores and some of my favorite recipe resources. Something I’m particularly looking forward to? Trying some new savory rhubarb recipes, and the weather slowly getting warm enough to crank out some ice cream again. In this weekend finds, I’ll show you what I’m talking about.

1. Toasted Sesame Seed Ice Cream

I feel like there were certainly a few recipes that I found this week that left me feeling like I wasn’t sure if it would be delicious or totally weird. This recipe from Milk and Honey may be one of them. The toasted sesame part sounds good, but then when I think about adding tahini, my brain and tastebuds get all confused. I guess I’ll just have to try it.

2. Rhubarb Baked Beans

There are some great looking savory rhubarb recipes out there – specifically those that involve roasting meats or sauces. On the other hand, there are these rhubarb baked beans, which, I admit, sound weird. I have purchased the ingredients to make these curious (and, admittedly, unappetizing-looking) beans. I’ll let you know how it goes, I guess…

3. Thai Salad

Today, after going climbing (for the first time in… over a year), my roommates and I were STARVING. So we made some Thai laarb and this salad from The Roasted Root. Both were a big hit, and I will definitely be using this salad again in the future. It’s beautifully colorful and I love the varied flavors, and it’s filling but also still healthy.

4. Mango, Yogurt, and Cardamom Ice Cream

Sorry, I got distracted for a moment by things that aren’t ice cream. Back in the sweet lane, this ice cream from Yotam Ottolenghi (genius, duh) had three things I really truly love: mango. greek yogurt. cardamom. Can’t wait to make this. I am thinking I need to have an ice cream party in order to make all the bizarre flavors I’m itching to make. Pretty sure my friends would be into that.

5. Eating Alone

So there’s now a restaurant, Eenmall, where there are only 1 person tables. That’s it. No Wi-Fi either. Great? I think so. Do you ever eat out by yourself? While I always have to take a deep breath before I do it (yeah, sometimes it’s a little scary to just be with yourself for an hour without a computer or phone or book in front of you), I always feel like my mind has cleared after the fact. So while only having a table-for-one option is a little different, I think eating alone is something we could all benefit from every once in a while.

I like being home. Traveling the world is awesome, don’t get me wrong. I will happily go on adventures like the one to Vietnam any time. But there is something about coming home to your own bed, your own shower, and your own kitchen. I feel like I need to give all my kitchen tools little hugs and tell them I’ve missed them. Which, at this point, I’ve basically done, because I’ve been cooking up a storm this week.

Portland, however, is being slightly less welcoming than my kitchen. Mostly just in its weather-related mood swings. Seriously, this whole week has been days of sporadically alternating sunshine and rain. Sometimes each lasts 5 minutes, sometimes an hour. But it’s making it awfully hard to cook. What I’m going to make is always determined by my mood, which is often influenced by the weather. Between the rain and sun breaks, I can’t decide if I should be making spring recipes or winter recipes.

This cinnamon raisin bread is the perfect balance between spring and winter, though I already know I’ll be making it year round. It’s homey and warming thanks to the springy crumb and the way it fills your kitchen with the most comforting smell. But the raisins and cinnamon bring a little fruitiness and fun to the mix, a little surprise if you will. This isn’t just plain ol’ bread, you know. This has a beautiful swirl of cinnamon sugar and beautifully juicy pops of fruit throughout it.

This recipe made two loaves, and I thought for certain I’d freeze one loaf, because my roommates just don’t usually eat that much bread (unless it’s beer bread). But I was wrong. In two days, we are down to half a loaf left. Everyone has been enjoying this bread, toasted, slathered with butter, or raspberry rhubarb jam, or nutella for breakfast and dessert and a snack here and there.

Point is, make this bread and your house will smell like heaven, your friends will love you, and you’ll be perfectly toeing the line between the seasons.

Cinnamon Raisin Bread

Makes 2 loaves

Ingredients

2 1/4 tsps (1 package) dry instant yeast
2 1/4+ cups warm water
3 Tbl and 1/4 cup granulated sugar, divided
1 Tbl salt
3 Tbl butter
6 -7 cups all-purpose flour
1 cup raisins
canola/vegetable oil
1 Tbl cinnamon

Instructions

In the bowl of an electric mixer (or not. If you don’t have one, this can easily be made with the strength of your own two arms.) combine 1/2 cup warm water, the yeast, and 1 Tbl of sugar. Set aside and let sit until it’s foamy. In another bowl, cover the raisins with warm-hot water, at least 2 cups. This step is optional, but it will plump the raisins, making them a bit juicier in the bread. After about 3 minutes, pour 1 3/4 cups of the raisin water off into a measuring cup and discard the rest. Pour the raisin water into the mixing bowl with the yeast, in addition to 2 Tbl sugar, the salt, 2 Tbl melted butter, 3 1/2 cups of flour, and all of the raisins. Mix with the paddle attachment until thoroughly combined, adding up to 3 more cups of flour until the dough is smooth enough to handle, but still moist. Switch from the paddle attachment to the dough hook, and knead for about 7 minutes (10 minutes if you’re kneading by hand). Dump the dough out onto a floured surface, coat the mixing bowl with canola or vegetable oil, and put the dough back into the bowl, turning it to coat, and cover the bowl with a clean dishtowel. Set the bowl in a warm spot (I like to turn on the light over my stove and set it under that) and let it rise for about an hour, or until it’s doubled.

In a small bowl, combine the remaining 1/4 cup sugar and 1 Tbl of cinnamon and mix well. Butter two bread pans. When the dough has doubled, remove it from the bowl onto a floured surface and punch it down, then divide it in half. Roll out one half of the dough into a rectangle that measures roughly 16 by 8 inches. Once rolled out, sprinkle the dough with 1 Tbl of water, and half of the cinnamon sugar mixture. Roll the dough up starting from the short end, and pinch the seam shut. Drop the roll of dough into one of the greased loaf pans. Repeat with the second half of dough. Brush the top of both loaves with the remaining 1 Tbl of melted butter, and cover them again with a clean dishtowel to let them rise for another hour in a warm spot.

About 15 minutes before your bread is done rising, preheat your oven to 425 degrees. Bake the bread for 30 minutes, or until the loaves look beautiful dark brown on top. Remove the loaves from the pans (beware, as cinnamon sugar may have oozed and become rather sticky – aprons are your friend) and set on a cooling rack. I recommend slicing into one of these bad boys when it’s still pretty warm. You can toast it and put a nice layer of cream cheese on top, like I did with my cinnamon raisin bread when I was younger, but a little butter will do nicely as well. Enjoy.

The time has come (the walrus said)! I want to tell you more about our trip to Vietnam, specifically the things we ate, before I forget all the details. Wouldn’t that be sad? Yes. It would. But first, I’ll tell you a little bit about where we went.

When we started planning this trip, we initially thought about going to Thailand. Then we thought about going to Cambodia. Eventually we settled on Vietnam. Why? While Vietnam is certainly a touristed country, Thailand is even more so, and we wanted something a little less traveled. To give you an idea, in the months before our trip, I know three separate people who visited Thailand, and none who went to Vietnam. After looking into Cambodia a bit, there wasn’t enough for us to want to do to warrant spending 10 days there – we would have wanted to tack it on one end of a longer trip, but we also didn’t want to pay for airfare once we were in SE Asia. So we decided to focus on northern Vietnam. I had been to Vietnam before, about 5 years ago, and had spent a small amount of time in the north, but we made sure to visit places I hadn’t been before. Travelfish became our good friend, and we were constantly reading new articles they were posting. Our itinerary ended up looking like this:

Day 1: Arrive in Hanoi

Day 4: Travel to Thac Ba Lake
Day 4-5: Spend at Thac Ba Lake
Day 6: Travel to Sapa
Day 6-8: Spend in Sapa
Night 8: Travel back to Hanoi

Day 9-11: Spend on Cat Ba Island
Day 12: Travel to Hanoi
Day 13: Travel back to Portland

While 2-3 days in one spot can seem like not enough, we were perfectly content with what we chose to do. We certainly could’ve done more trekking in Sapa, or more outdoor adventures in Cat Ba, but we got a great taste of what each town had to offer, and we felt like we used our time very well. And while we did spend a fair amount of time in transit, it’s actually how we met some interesting people, had some daring adventures (read: life-threatening rides that we didn’t know how they’d end), and saw a lot of the beautiful countryside. Now, let’s get to the food!

Jonah and I both love Vietnamese food, particularly because of the light, bright flavors, and the use of fresh ingredients. There are lots of greens, fruits, fish sauce, and dipping sauces, but nothing is heavy or overpowering. While we were determined to be thoroughly adventurous eaters, it took us a little bit to get comfortable eating the street food – ordering is hard when it’s so hard to communicate. The best example of this was when we sat down at a Bun Bo spot, and were simply handed two bowls of food. It was fantastic – no misinterpretations (which, trust me, happened a lot), no making fools of ourselves – they pretty much knew what we wanted. But the street food was certainly the best food we ate (except for the food at our cooking class, which was incredible). We learned that a lot of the Vietnamese food you find in America is from South Vietnam, because they are the majority of the people who fled during the American War and the reunification. Also, warning, there are some things I ate (and pictures of it below) that may be less than appealing to you, so if you have a squeamish stomach, brace yourself.

Probably our favorite discovery was Bun Cha (forgive my lack of accents here). Grilled pork served in a bowl of a sweet, fish sauce-based sauce, with a plate of vermicelli noodles and greens/herbs. The broth is more of a sauce, and you fill your bowl with the noodles and greens, and everything gets drenched in it, and it’s so flavorful and delicious. We learned how to make it in our cooking class, and recently bought some pork at the farmer’s market so we can attempt it on our own. Once we perfect it, you can bet the recipe will be coming to Serious Crust. Other favorites included lots of delicious pork spare ribs – the best were at La Vie Vu Linh, our eco-lodge at Thac Ba Lake – and the sticky rice at Xoi Yen, a suggestion from my little sister who studied abroad in Vietnam.

There are a lot of “bia hoi ha noi” spots, which are kind of the Vietnamese equivalent to beer halls. These places have tiny plastic tables and chairs/stools that spill out into the street, and they serve the lightest beer I’ve every tasted (bia hoi), which is often made in the morning and served the same night. Each table comes with a bag of peanuts, but some stalls have menus, and we ordered some awesome food from these spots. Because everyone is drinking, and will often be there for a few hours, people certainly get friendly. We were heckled by more than a few old Vietnamese men when we found a bia hoi spot where we were the only white people, and later met a very nice Australian expat at another.

We also ate: some form of rice dough rolls stuffed with minced pork and mushrooms, shrimp and sweet potato fritters, bun bo (bowls of vermicelli noodles, slices of beef, greens, herbs, and a light sauce), sticky rice with corn, some really good pork spare ribs, buffalo jerky, banana blossom salad, lots of spring rolls, crepe-like pancakes, and more than our fair share of Vietnamese coffee (served with a layer of sweetened condensed milk in the bottom that you stir in). Jonah refrained from trying the roasted sparrow and the duck embryo that I tried, though I couldn’t manage to eat either like a local. But hey, points for trying, right?

Weekend Finds 4:20:14

I know it’s not technically the weekend anymore, but this weekend was busy and I got distracted… So I’m giving you weekend finds on Monday. So maybe you can still pretend it’s the weekend.

1. Asian flavors

I thought what would happen is that I’d come back from Vietnam and be a little tired of Asian flavors for a while. Turns out the opposite is true. All I want is Asian food, preferably Vietnamese, but Japanese and maybe even Thai will also do. (I leave out Chinese food because DAMN is it hard to find good Chinese food in Portland. Don’t even get me started.) So this noodle salad recipe will be making an appearance soon, as will, hopefully, the Bun Cha that we learned to make in Hanoi.

2. Soy and Garlic Marinated Pork

Yesterday, the weather was decent enough that we got too excited and grilled a whole meal. There was corn and Japanese eggplant, and there was also this marinated pork. I wish I could tell you what was so magical about it (maybe it had something to do with the fact that Jonah brushed the meat with the marinade every time he flipped it), but I’m not totally sure. Either way, you should fire up your grill and make it sooner rather than later.

3. Broccoli Rabe Crostini

In another edition of stuff I ate this week: I got excited and bought broccoli rabe (raab) at the market last week, and when I found this recipe, I knew this is what I’d be using it for. Our grocery store didn’t have burrata, so we used good old mozzarella, and it was awesome.

4. Cardamom Short Bread

Easter was a thing this weekend, and while I didn’t really celebrate (unless band practice counts), my roommate Carmelle had her family in town, and made a sampling of beautiful desserts, including this cardamom short bread from the Sugar Cube cookbook. Now, you know I love the Sugar Cube – in face I may have a mild addiction – but even if I hadn’t already fallen in love with Kir Jensen, this short bread would’ve done it to me. It was light and flaky and beautifully flavored. Yum.

5. Honey Barbecued Chicken

Apparently this week all I can think about is what I want to eat, or have eaten that I want to eat again. Since firing up the grill this past weekend, I’m on the lookout for delicious BBQ meals. This honey barbecued chicken looks pretttty flavorful and tasty, what with 24 hours marinating in that rub and then adding a glaze on top.

It’s raining in Portland. I know, surprise, surprise. But it wasn’t that long ago that the sun was shining and I even got a sunburn. Seriously! Last weekend, Jonah’s mom and Grandma were in town for the day, and we took them to the PSU Farmer’s Market, which has got to be one of my favorite things about Portland. The sun was shining, I wasn’t even wearing a jacket, and there was beautiful crimson rhubarb everywhere! Rhubarb has got to be one of my favorite ingredients of all time, so I was excited, to say the least.

As I was getting ready for Passover dinner on Tuesday, I decided to nix the matzo crunch in favor of something a little more reminiscent of springtime: some baked rhubarb. After doing a little recipe hunting and finding this recipe on Food52 and this recipe on Orangette, I decided to do a little adapting. This recipe is so easy and delicious – I love the slightly sour flavor of the rhubarb and the hint of lemon, cardamom, and earl grey. I balanced the tartness with some fresh whipped cream, but ice cream, fresh ricotta, or yogurt are also great options.

Baked Rhubarb with Lemon and Cardamom

Ingredients

6 cups rhubarb, cut into 1-inch pieces
1 cup granulated sugar
1 meyer lemon, juiced
1/8 tsp cardamom
3/4 cup steeped and cooled earl grey tea

optional: fresh whipped cream, ice cream, fresh ricotta, or yogurt for serving

Instructions

Preheat your oven to 350 degrees. In a baking dish, combine rhubarb, sugar, lemon juice, cardamom, and tea. Stir to combine. Bake for 15 minutes, stir, and bake for another 15 minutes. Remove from oven, and allow to cool. You can serve the rhubarb warm, room temperature, or chilled, all are wonderful. Yes, that’s it. Can you believe how easy this is?

P.S. The leftovers, if there are any, taste delicious stirred into your yogurt and granola the next morning. Or on top of pancakes. Just saying.
