Easy Energy Bites

Easy Energy Bites // Serious Crust

So these energy bite things have been popping up in my life for a while now. I’ve seen them everywhere: favorite foodie websites, blogs, Pinterest (duh, everything is on Pinterest), and on my sister’s Facebook. I tried a batch inspired by Sprouted Kitchen that was peanut butter heavy, but they weren’t really my jam (but maybe peanut butter is your jam, or jelly, as it were). After talking to my sister, she inspired me to try her version. And they were great. They were fruity, jammy, chewy, and a little nutty, similar to Larabars.

The beauty of these is that they could not be easier to make. Also, people have found them really impressive, even though they took a mere pressing of buttons to make. The other beauty of these is that you can make them using whatever you’re in the mood for. On this particular day, dried apricots and cherries were calling my name. But I also wanted a little decadence, so I threw in some semi-sweet chocolate chips. The possibilities are endless. And I like that.

Easy Energy Bites

Note: you will need a food processor to make these. You could try them in a blender, but I’m not making any promises about what might happen.

Ingredients

1 cup nuts (I used almond) – toasting optional
1 cup pitted dates
1 cup dried fruit (I went for half apricots, half sour cherries)
Optional: 1/2 cup semi-sweet or dark chocolate, or cocoa nibs

Instructions

Get out a large piece of wax or parchment paper.

Combine the nuts, dates, whatever dried fruit, and chocolate (if you’re using it) in a food processor. Pulse a few times to break up the ingredients, stopping to separate the dates if they clump together. Now, turn the food processor on for 30 seconds or so. Everything should break down every more to crumbly pieces. Scrape down the edges of the bowl. Process again for 1-2 minutes until a paste starts to form and the ingredients clump together into a ball. Dump the paste/dough onto the piece of parchment or wax paper, and press it with your hands until it forms a square, roughly 8×8. Wrap up the dough, and let cool in the fridge for at least an hour, or up to overnight.

Once the dough is chilled, unwrap it, slice it into bars of whatever size. You can individually wrap the bars if you’d like, but I stacked mine in a tupperware and stored them in the fridge. Note that they don’t necessarily need to be kept in the fridge, but doing so will help them maintain their shape and firmness. Room temperature bars will be softer and pastier.

I love the summer. I really do. Yesterday’s trip to the farmer’s market was beautiful – everything smelled so good, and I wanted to bring it all home with me. I wish my little sister was here to help me pick out the best tomatoes. But there’s that thing that’s starting to nag in the back of my mind. I look at my closet and wish I could wear some of my favorite sweaters. I wish I could make tea anytime after 10 a.m. and not be too hot to drink it. But then I look at the tomatoes, and I’m ok with summer for a while longer. On to these late summer weekend finds:

Tis the season for homemade ice cream, and these tips from BA are really helpful if you’re new to the game. Overall, these tips are mostly about time – take the time to cook your custard well, take the time to add your chunks and ribbons at the right moment, and take the time to let the ice cream set up in the freezer. Trust me, it’s worth it.

Speaking of ice cream… David Lebovitz knows his stuff when it comes to ice cream. So I trust him. And when he says to make a ricotta ice cream with pistachios and candied lemon, I listen. This ice cream sounds like it would be sublime on top of a berry crumb cake or polenta cake or something like that. Talk about a lovely summer dessert.

I posted this recipe 2 years ago (wow), and I was reminded of it this week because there’s a plum tree on our walk way, and the plums are starting to ripen (and fall). This means it’s almost time to make plum chutney. And the chicken that goes with it. This is by far one of my favorite summer dishes, and I can’t wait.

5. Alternative Pie Crusts

Now you know I love my pie crust, but sometimes it’s time to try new things. All of these alternative crusts look awesome, as in I would like to try all of them now. I’m particularly intrigued by the rice crust.

Weekend Finds 3:1:14: Kitchen Art

I’ve made a decision. Sometimes, when my weekend finds have a theme, I will title them as such. Isn’t that sensible? I thought, hm, maybe I could collect all the cool kitchen art and share it with readers all at once, so that if they’re looking for kitchen art, they can look at one post? Or perhaps if they’re looking for some fun wooden spoons, all of those are in one place? Or perhaps, if there are some kitchens I’m lusting to cook in, I can show them all to you at once? I’m not saying all of my weekend finds from here on out will have a theme. But when the time is right, they might. I hope that’s alright. This week, as I mentioned, I’m obsessed with kitchen art.

I really like a lot of prints from this shop on Etsy, but I love love love this radicchio print. I discovered it via Design*Sponge, and keep plotting a way I can have it, and where I can put it.

2. Sugarboo Postcards

I really like postcards, and I have always thought it would be fun to get postcards separately framed and hang a grid of them on a large-ish wall. I think some of these food and friend related ones from Sugarboo are so sweet. My favorite has to be the radish postcard pictured above.

Yes, that’s the name of this print from Society 6. Yes, I’ve been pining after this print for years. It combines old music (remember how much I’ve mentioned my Ella Fitzgerald and Louis Armstrong Pandora station?) and food, and I just think it’s so sweet. I would hang it anywhere, but feel it would be perfect in a kitchen.

5. Cutting Boards

There are almost too many options when it comes to beautiful cutting boards.

Not all your kitchen art has to bed 2D. Speaking of functional decorations, there are some beautiful cutting boards out there – some vintage like this one, some modern like these. Maybe these state shaped cutting boards are more your style. Or these chevron ones. Just make sure, if you’re going to try something heavy, that you secure it safely to the wall with a nice sturdy hook or nail. Most of these have holes or straps, or I’m sure they could be easily added.

6. Prints from your favorite blog/cookbook
