Friday Finds 7:5:13

Jonah and I are in Chicago for the holiday weekend. Today we’re actually heading to Wisconsin, where Jonah’s playing drums (!!!) with his old Cajun band in a music festival. It should be pretty entertaining. Here’s the Friday finds for this week.

I am waiting patiently (or not… whatever…) to make some roasted tomatoes this summer. I had mostly forgotten about them until my dear friend Rosanne told me she was making some. Now they’re all I can think about.

Jonah’s Birthday: Mint Chocolate Chip Cake

I wasn't able to catch it before it was thoroughly enjoyed by our house, but hey, it still looks delicious!

Jonah’s birthday was a little over a month ago, but I am just now getting around to posting about his birthday cake. It has been a little busy around here! We are finishing up the recording of Jonah’s first solo full length album – I was in the studio Friday afternoon, Saturday afternoon, and am going back today. Let me tell you guys, it sounds amazing. I’ll tell you all more about it when we get closer to the release. But big cool things happening, I promise.

Anyway, for Jonah’s birthday, my roommate Carmelle and I made him a mint chocolate chip cake, a recipe I’ve been eyeing for quite some time. And let me say, of our birthday treats, this one has been my favorite. This chocolate cake recipe was definitely one of the more perfect ones I’ve made. It was perfectly chocolatey, light, and moist. In the future, I will use this cake as a base for many exciting things, I can tell. The frosting was wonderfully minty, but not overpowering. Overall, the flavors were really nice, and it’s definitely a good occasion cake because it’s unique.

Mint Chocolate Chip Cake

Ingredients

Cake

9 Tbl unsweetened cocoa powder
1 1/2 cups cake flour (If you don’t have cake flour and don’t want to buy a whole bag for 1 1/2 cups, use plain flour and replace 3 tbsp with cornstarch)
1 1/2 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 stick unsalted butter, at room temperature
1 1/2 cups sugar
2 large eggs
1/2 cup coffee
1/2 cup milk

Frosting

2 1/2 sticks unsalted butter
~4 cups powdered sugar
2-3 tsp peppermint extract (plus some for taste)
Milk, if necessary
150g dark chocolate, very finely chopped
green food coloring

Instructions

Cake

Butter and line with parchment paper two 9-inch cake pans and preheat oven to 350 degrees. In a medium bowl, sift together the cocoa, flour, salt, baking soda, and baking powder. In an electric mixer, beat the butter and sugar fora  few minutes until it’s smooth. Add the eggs, mixing after each addition until fully combined.

In a cup, mix the milk and coffee together and set aside. Add half of the dry ingredients and the coffee/milk mixture to the butter mixture, and stir. Add the second half of the dry ingredients and mix until smooth. Split the batter into the prepared cake pans, and bake for about 25 minutes, or until you’ve had a successful toothpick test. Remove from the oven and allow the cakes to cool for about 5 minutes in their pans, then remove them onto a wire cooling rack and allow them to cool completely before icing them.

Frosting

Now it’s time for the icing. I will give full disclosure: Carmelle and Mac made the icing, iced the cake, and decorated while I was out… doing something… I can’t quite remember at the time. I advise rinsing out the bowl of your electric mixer and using that again. Cut the butter into smaller pieces and put them in the mixing bowl. Beat until it’s fluffy. Now add the powdered sugar one cup at a time (or 1/2 cup at a time once you’re getting closer to the right consistency), beating between each addition until combined. If it gets too stiff, you can add a little bit of milk (think 1 Tbl at a time) to get it back to the right consistency. Add the peppermint extract and enough green food coloring to get it to that pretty mint green color. Slowly add the chocolate pieces until it looks the way you’d like and, more importantly, there’s a good amount of chocolate.

Put the first cake on whatever you’re going to use to serve: a cake stand, a plate, etc. Using about 1/4 of the icing,  frost the top of the first layer. Place second cake one top of the first, and cover the whole dang thing with the rest of the icing. Carmelle pointed out that one of the beauties of this cake was that if little crumbs came off the cake and got in the icing, it didn’t really matter, because there were already little brown bits of chocolate in it. Mac used the extra chopped chocolate to make a lovely little design op top. Serve with candles and a glass of milk!

Thai-Style Steak Salad

Life has been crazy busy. I know I keep saying that, but then it keeps getting busier. Maybe I’m jinxing it. Anyway, cooking has definitely been put on the back burner, which is a bummer. Mostly because I love good food and I love cooking it. But it’s hard when you come home and you’re tired and you have to look for recipes and then go to the store, etc. Lately, Jonah and I have been all for quick, light meals. I found a bunch of delicious looking main dish salads on Martha Stewart’s website. This is the Thai-Style Steak Salad. We halved it but I’ll give you the original recipe, which serves 4.

Thai-Style Steak Salad

Ingredients

1/4 cup freshly squeezed lime juice
1 tablespoon soy sauce
1 tablespoon sugar
1/4 to 1/2 teaspoon red-pepper flakes
3 tablespoons vegetable oil
2 boneless rib-eye steaks (each 8 ounces and 3/4 inch thick)
Coarse salt and ground pepper
1/2 pound carrots (3 to 4 medium)
1 medium head romaine lettuce, cut crosswise into 1-inch ribbons
1/2 cup fresh mint leaves
1/3 cup salted peanuts, chopped (optional)
Peanut sauce (optional)

Instructions

First, make the marinade by whisking the lime juice, soy sauce, sugar, red pepper flakes, and oil in a bowl. Season the steaks with a bit of salt and pepper, place them in a dish, and pour 1/4 of the marinade over the steaks (save the rest of the marinade in a bowl). Turn the steaks to coat and let them marinate for 30 minutes.

In a large skillet, cook the steaks on medium-high heat. Cook it 2-3 minutes per side for it to be medium-rare. Cook it more if you want. Transfer the meat to a cutting board, tent it with aluminum foil, and let it rest for 5-10 minutes. Slice the steaks nice and thin, preferably 1/4 inch-thick. If they’re too long, you can halve the slices crosswise. Transfer the meat back to the bowl with the marinade and toss it to coat.

While the meat is resting (or marinating, for that matter), peel the carrots into ribbons with a peeler. Chop the peanuts too, while you’re at it. Add the carrots to the bowl with the steak, as well as the lettuce and the mint, and toss to combine. Divide evenly into shallow bowls, sprinkle with the peanuts (and peanut sauce if you want), and serve!

As soon as we got back from Thanksgiving in Seattle, I was ready to make Christmas cookies. It was all I could think about. I knew the family upstairs had a cookbook that I loved as a kid, and that there was a recipe in that cookbook that I couldn’t wait to make for Jonah.

This is a children’s cookbook, so the greatest thing about it is that after the lists of ingredients and equipment you’ll need, there’s also a list called “Ask an adult for help with” and then the next page shows you, in illustrations, how to make the recipe. I turned right to the Green Mint Crinkles (page 126) and got started.

Green Mint Crinkles

Ingredients

1 stick of butter, melted
3/4 cup sugar
2 teaspoons peppermint extract
1 teaspoon vanilla extract
1 egg
1/4 cup milk
2 cups flour
2 teaspoons baking powder
1/4 teaspoon of salt
1 (2.25 oz.) jar of green cake decoration crystals

Instructions

Preheat oven to 350 degrees. Grease a baking sheet with butter or oil. In a large mixing bowl, mix together melted butter, sugar, peppermint extract, and vanilla extract. In a small separate bowl, beat the egg, then add to the sugar mixture along with the milk.

Then add the flour, baking powder, salt, and green crystals. You’ll want to mix this by hand if you’re using a mixer, being sure to mix the green crystals in well. It’s always awkward when there’s a little patch of green at the bottom of the bowl, am I right?

Now make balls of dough roughly the size of a ping pong ball (I did mine a little smaller just so I could have more cookies) and place the balls on the prepared baking sheet. They can be close together because they barely spread, but they shouldn’t touch. Put them in the oven and bake for 12 minutes.

Let them cool a bit before removing them from the tray as they can be pretty fragile when you remove them. My favorite part of eating these cookies is to eat them when they’re still pretty warm and, when your mouth is full of cookie, to inhale. You get this minty steam and it tastes so good and feels like mint oil but in your MOUTH. Ok, I’ll stop. Enjoy with a glass of milk!
