Grilled Romaine Salad (with 9 minute eggs)

Grilled Romaine Hearts (with a 9-minute egg) // Serious Crust

Moms are cute. My mom especially, is very cute. I’ve told you about her, right? Last weekend Jonah and I went out to Cannon Beach with my mom and her boyfriend and my baby sister and my sister’s girlfriend, and we had a lovely weekend, and then my mom proceeded to send us home with two boxes of food. (Because she’s a mom and that’s what moms do, they give you food.) She tried to give us much more. She was going through the kitchen saying things like “Do you want some cream cheese?” (No.) “How about some romaine hearts?” (Yes.)

We got home around 8:30pm on Saturday, and all I wanted was food. And we had food. Lots of it. Thanks, Mom. I’ve had grilled romaine hearts at restaurants, and figured it can’t be that hard to make, can it? You guys, it was so good. Why have I been waiting this long to grill romaine hearts? It was super easy. The grilling softened and warmed the romaine, but retained some of that famous crunch. The eggs were perfectly cooked, if I do say so myself, the dressing was salty and tangy, and the breadcrumbs brought a great crispiness.

Grilled Romaine Salad


Romaine Salad

1 romaine heart per person
1-2 9-minute eggs per person (details below)
toasted bread crumbs to garnish


2 tsp soy sauce
1 tsp fish sauce (optional)
1 Tbl balsamic vinegar
1 Tbl sesame oil
1 Tbl olive oil


Romaine Salad

Heat your grill. Slice the romaine hearts in half lengthwise. Brush with oil. Grill until slightly charred and wilted, flipping, and repeating on the other side.

To make 9 minute eggs, bring a small pot of water with a sprinkling of baking soda to a boil. Lower in as many eggs as you are making using a spoon, slotted or otherwise. Boil for 9 minutes, drain, and rinse in cold water to cool. (As far as the eggs to, I have come to rely on this article/image from Bon Appetit as a guide for how long I should cook my eggs.)


Make the dressing by combining the ingredients in a jar and shaking until thoroughly combined.

To serve, drizzle the dressing over the romaine hearts, top with sliced 9-minute eggs, and a heavy sprinkling of breadcrumbs. Enjoy.

I don’t know about you all, but I had a truly lovely July 4th. I ate possibly one of the most delicious summer holiday meals every – perfectly grilled steak, BBQ chicken, grilled veggies, and that green rice salad I’ve been going on about. Now I’m at the coast with family, and couldn’t be happier that I get to spend this holiday weekend with people I really love. With that, on to the weekend finds.

1. Corn, Tomato, and Garlic Confit Pasta

Garlic confit sounds intimidating to me. It really does. But let me say this – it was so easy to make. Like painfully easy. And it added immensely to this dish from Food52 (by Dash and Bella). This dish screams summer, and was so creamy and flavor packed. Just start roasting those tomatoes early! They need 2-3 hours in a low oven.

2. Easy Marinades

I love summer because it means marinating meats and throwing them on the grill. I’ve got a couple good marinade recipes in my back pocket, but more can never hurt, nor can the ability to throw one together no matter what you’ve got on hand. This little tidbit from Bon Appetit offers some great ideas, as well as a general equation to make your marinades perfect.

3. Apricots!

If I’m being honest, I think apricots are kind of an undervalued stone fruit. I love their small size (the perfect snack), their soft skin, and their mild/sweet/tart flavor. Perhaps my favorite thing to do with apricots is halve them, fill the hole where the pit was with a spoonful of honey, and throw them under the broiler for a few minutes. Top with Greek yogurt, mascarpone, or freshly whipped cream, and some chopped pistachios. Other bites of apricots that look delicious are these crostinis, a different roasted apricot technique with butter and brown sugar, this couscous with apricot (sub fresh for dried apricots please), and this apricot miso jam (I know the recipe calls for dried apricots, but still, two of my favorite things in a jar together, yes please right now thank you).

4. Peas, peas, peas

I love ingredient education, and various kinds of peas are something that I confuse sometimes. It’s actually pretty important to know the different between your peas, particularly shelling peas and snap peas. Read here about which are best for what.

This is the cookbook that the green rice salad with nectarines and corn is from (the one I haven’t been able to stop talking about and made for the 4th of July), and that recipe was so freaking good, now I really want this cookbook. I love when books are organized seasonally – I feel like it makes it easier to flip through. And taking a look at some of the recipes in the table of contents, I feel like this book is something I’d reach for again and again. Wish list!

My summer craziness has begun! How about yours? Hopefully these weekend finds can help us slow down a bit and remember to enjoy the summer season.

1. Romesco Sauce

Romesco is made with roasted bell peppers, toasted almonds, tomato paste, garlic, oil, and spices.

I’ve had romesco sauce plenty of times, but it was really last summer when my dad put it over some roasted cauliflower that it won my heart. I think grilling season is a perfect time of year to keep a batch of the stuff in your fridge, as it makes a really flavor packed topping for those lightly charred vegetables.

2. PedalPalooza 2014

So Portland, being the bike-centric city we are, has this month-long event called Pedalpalooza, with all these themed bike rides around the city. Jonah’s co-worker even led a Beyoncé themed ride last week! But there are a few rides for foodies: today there’s a homebrews and community gardens ride, tomorrow there’s a food cart ride, on Wednesday there’s a bees vs. Monsanto ride (yes, you dress up as bees and farmers and stop at the offices of food influencers in the city), and on Friday there’s both a coffee and carousing ride as well as breakfast on bridges (a stand set up with coffee and donuts where you can stop on your way to work). And of course, Friday night, there’s a champagne ride. So what else do you need? Get riding!

3. Warm-weather Whiskey Drinks

5. Jamaica

I gotta say, if you’ve never had jamaica, you’re missing out. It’s a refreshing, tart, fruity drink, a la lemonade, and is perfect for summer time. I love hibiscus tea, and this is really just a cold version of that. I found bulk hibiscus at my grocery store, but you can usually find bags of the petals in the latin foods section. In case you needed another reason to make this beverage, it’s also a great mixer for cocktails.

1. Using Strawberry Tops

I always feel bad tossing overripe strawberries or strawberry tops. Sometimes I toss them in smoothies, but this strawberry water seems like a perfectly refreshing idea to have in my back pocket this summer.

2. Homemade Teriyaki Sauce

I’m into teriyaki sauce, especially in the summer on top of some grilled salmon or grilled chicken or other grilled things. I’d love to try making it myself using this recipe from A Cozy Kitchen. 

3. Camping Trip Recipes

We’re planning a few camping trips this summer, and I have a feeling some of these recipes might come in handy. I’m especially interested in the bulgogi jerky, the charred corn and avocado salad, and the roasted potatoes with za’atar.
